Overview
You'll own the full operation of Plomo Quesadillas in Dallas, including kitchen, staff, and financial performance, driving revenue and guest experience at our high-energy late night eatery. Reporting to the ownership team, you'll lead a scratch kitchen crew, manage budgets, and implement systems that keep quality and safety at the highest level. What You'll Do10
- 1Build and execute the kitchen's prep schedule and catering operations, supervising all culinary output from scratch.
- 2Own the P&L for the kitchen, setting budgets, tracking food and labor costs, and adjusting strategies to hit revenue and profitability goals.
- 3Collaborate with key team members to boost guest experience through menu development, special events, and service improvements.
- 4Hire, train, and manage a high-performing kitchen staff, including scheduling, coaching, and disciplinary processes.
- 5Develop kitchen training manuals and SOPs to ensure consistent communication and operational standards.
- 6Oversee all inventory management, from purchasing and receiving to storage and quality control, including weekly and month-end physical counts.
- 7Implement food waste reduction programs and equipment cleaning logs to maintain a safe and efficient kitchen.
- 8Engage with guests to build relationships and drive repeat business, representing the Plomo brand at community events.
- 9Ensure compliance with health and safety regulations, exceeding local and state requirements.
- 10Drive the integration of seasonal menu items and promotional events, aligning culinary programs with marketing strategies.
Requirements10
- 14+ years experience in restaurant management with 2+ years in a supervisory role.
- 2ServSafe Certified and bilingual (Spanish/English) preferred.
- 3Proven track record in food service management, including inventory control and cost analysis.
- 4Strong financial acumen, with the ability to read and interpret financial reports and manage budgets.
- 5Effective communication skills for team leadership, public presentations, and guest relations.
- 6Comfort with Microsoft Office and standard POS systems.
- 7Ability to work flexible hours, including nights, weekends, and some local travel.
- 8Physical stamina to stand for long periods, lift up to 25 pounds, and work in a high-functioning kitchen.
- 9Valid Driver's License and reliable transportation.
- 10High school diploma or equivalent required; degree in hospitality or business a plus.
