You will own your station at Sartiano's, a premium Italian restaurant in the Mercer Hotel, delivering classic modern Italian cuisine under Chef Alfred Portale. You'll prep, cook, and plate dishes with precision, coordinating with a high-energy kitchen team during peak service. This role demands strong knife skills, timing, and a commitment to food safety standards. You'll grow through training, tastings, and menu development in a collaborative, professional environment.
What You'll Do10
- 1Prep, set up, and run your station with strong knife skills during busy service.
- 2Cook and plate menu items to recipe, quality, and presentation standards while maintaining timing and ticket flow.
- 3Collaborate with the kitchen team to deliver exceptional guest experiences.
- 4Understand ingredients and preparation methods to ensure consistency and accurate execution.
- 5Plan and manage your shift, including station readiness and proactive communication.
- 6Follow food safety and sanitation standards: FIFO, temperature control, allergens, clean-as-you-go.
- 7Receive deliveries, rotate inventory, and minimize waste.
- 8Operate kitchen equipment safely and report maintenance or product issues.
- 9Support teammates during peak periods and jump in where needed.
- 10Participate in training, tastings, menu changes, and special events.
Requirements10
- 12+ years experience as Line Cook or similar position.
- 2Fluent in English (written and spoken).
- 3Basic math skills.
- 4Ability to maintain a positive and professional demeanor at all times.
- 5Ability to understand and follow written and verbal instructions.
- 6Ability to multitask and work in a fast-paced environment.
- 7Maintain a polished personal presentation meeting company grooming standards.
- 8Available to work nights, weekends, and holidays within a variable schedule.
- 9Willing to attend mandatory staff meetings and trainings.
- 10Adherent to company, state, and county sanitation standards and all HR policies.
