Executive Chef, French Bistro & Wine Program in Columbus
Overview
Own the culinary program for an authentic French bistro and wine bar in downtown Columbus part of a respected hospitality group. Lead menu vision, kitchen operations, sourcing, and financial performance with hands-on line leadership during service. Collaborate with GM, beverage team, and ownership to ensure cohesive food and wine experiences and a distinctive culinary identity.
What You'll Do10
- 1Lead menu creation and seasonal evolution rooted in classical French technique with a creative bistro twist
- 2Build recipes, sheets, and plating standards to ensure cross-shift consistency
- 3Coordinate with beverage team on pairings, wine dinners, and special programming
- 4Run the line during service and maintain quality from prep through pass
- 5Oversee BOH scheduling, labor management, and shift assignments
- 6Lead pre-shift meetings and communicate menu changes and service notes to FOH
- 7Develop and maintain relationships with local farms and purveyors across Ohio and Midwest
- 8Manage ordering, receiving, and inventory across all product categories
- 9Hit COGS targets through smart purchasing, yield management, and waste control
- 10Own the BOH P&L including budgeting, forecasting, and variance reporting
Requirements10
- 17+ years of progressive culinary leadership with at least 3 years as CDC or Executive Chef in a full-service restaurant
- 2Deep grounding in classical French technique with creative modern perspective
- 3Demonstrated menu development experience and strong culinary voice
- 4Proven financial acumen including P&L ownership, cost discipline, and forecasting
- 5Strong leadership track record in building and developing kitchen teams
- 6Genuine interest in wine and pairing menus; wine knowledge a major plus
- 7French training or fluency in French gastronomy strongly preferred
- 8ServSafe Manager certification or the ability to obtain within 30 days
- 9Polished communicator with BOH and FOH; ability to stay calm under pressure
- 10Culinary degree or equivalent training; willing to work evenings, weekends, holidays, and events
