Overview
You own the food service department at Harborview Health Center, a skilled nursing facility in Kissimmee, Florida. You run daily operations for a team serving residents with therapeutic diets under CMS and state regulations. You report to the Administrator and work alongside nursing and dietary staff. What You'll Do10
- 1Run daily food service operations, from meal prep to tray line, for 120+ residents.
- 2Ensure therapeutic diets match physician orders and CMS standards on every tray.
- 3Complete MDS dietary sections and write resident care plans with the care team.
- 4Adjust menus with the consultant dietitian to meet nutritional needs and resident preferences.
- 5Weigh residents on admission, monthly, and after any weight change to catch issues early.
- 6Set performance standards for food quality, service speed, and resident satisfaction.
- 7Control food costs and inventory to keep the department within budget.
- 8Supervise dietary staff, train them on ServSafe and sanitation, and hold them accountable.
- 9Investigate complaints and implement corrective actions to improve resident dining.
- 10Partner with the Administrator on budget planning and regulatory survey readiness.
Requirements8
- 12+ years managing food service in a skilled nursing or healthcare facility.
- 2Knowledge of therapeutic diets, CMS dietary standards, and infection control.
- 3ServSafe Certification or equivalent food safety certification.
- 4Certified Dietary Manager or Food Manager Certified.
- 5Experience with MDS 3.0 and dietary care plans.
- 6Strong leadership and communication skills with staff and residents.
- 7Ability to stand for long shifts and lift up to 50 lbs.
- 8High school diploma or GED; Associate's degree in food service management preferred.
