What You'll Do10
- 1Own daily dietary operations, directing a culinary team to deliver high-quality meals that meet resident nutritional needs and preferences.
- 2Complete nutrition screenings and assessments, updating diet histories as part of comprehensive care plans for each resident.
- 3Collaborate with the interdisciplinary team to develop and implement individualized plans of care, participating in care conferences and communicating resident concerns.
- 4Plan menus with the dietitian, ensuring compliance with CMS regulations, therapeutic diets, and texture modifications.
- 5Verify resident information for admissions, diet orders, and census, ensuring accurate nutrition documentation in MDS and care plans.
- 6Conduct meal observations and audits to ensure residents receive appropriate food amounts, types, and consistencies, adjusting menus as needed.
- 7Manage food procurement and inventory, ordering from approved sources while maintaining cost controls and storage standards.
- 8Ensure food safety and sanitation, supervising food handling, storage, and waste disposal to prevent foodborne illness.
- 9Lead survey preparation, maintaining presence during inspections and directing corrective actions as needed.
- 10Contribute to budget development and quality assurance, conducting audits and implementing performance improvement initiatives.
Requirements10
- 1Certified Dietary Manager (CDM) certification required.
- 2ServSafe certification required or obtain within 90 days of employment.
- 3High school diploma or equivalent required.
- 42+ years of supervised food service experience in an institutional setting, focusing on planning, preparing, and serving therapeutic diets.
- 5Knowledge of CMS regulations, therapeutic diets, texture modifications, and food safety standards.
- 6Computer skills required for documentation and inventory management.
- 7Meets all state and federal criminal background check requirements.
- 8Demonstrated supervisory experience in a dietary department, leading teams effectively.
- 9Strong communication and collaboration skills with interdisciplinary teams.
- 10Ability to conduct audits and implement corrective actions to maintain compliance.
