Kitchen Lead, Scratch Kitchen & Restaurant Operations
Overview
As Kitchen Lead at Swine & Sons, you will oversee daily production and service in our scratch kitchen, managing a team of cooks and front-of-house staff at a high-volume, family-dining restaurant. You will own scheduling, ordering, training, and enforcing policies, reporting directly to the owner/operator. You'll step in as line cook or expedite during rush, ensuring flawless service. What You'll Do9
- 1Supervise a team of 5-10 kitchen staff, assign duties, and create daily shift schedules while keeping labor costs on track.
- 2Monitor team performance during service and correct issues in real time to maintain efficiency and quality.
- 3Report any operational issues to owner/operators immediately and propose solutions.
- 4Manage employee requests, disputes, and performance issues, issuing disciplinary action as needed.
- 5Order food and dry goods from vendors, negotiating prices and maintaining inventory par levels to control food and paper costs.
- 6Enforce compliance with company policies, health and safety standards, including ServSafe protocols.
- 7Coach and train new staff on kitchen procedures, cleaning lists, and dish quality standards.
- 8Handle customer complaints and resolve employee conflicts on the spot, maintaining a positive work environment.
- 9Maintain clean and organized workspaces, holding staff accountable for deep-cleaning tasks.
Requirements10
- 13+ years experience in the food and beverage industry, with 1+ years managing employees, vendors, and customer relationships.
- 21+ years experience as a Shift Leader or equivalent, including ordering and creating schedules in a high-volume restaurant.
- 3High school diploma or GED; culinary degree preferred.
- 4Valid driver's license and willingness to assist with catering delivery as needed.
- 5ServSafe Food Handler's Management Certificate with a score of 85% or higher.
- 6Proficiency in spreadsheets, email, and word processing; Google Drive experience a plus.
- 7Ability to stand and walk for up to 12 hours per day, and lift boxes up to 50 lbs.
- 8Strong leadership and communication skills, with a genuine love of hospitality.
- 9Tolerance for temperature extremes (kitchen heat and walk-in cooler).
- 10Flexibility to work long hours, including nights, weekends, and holidays.
