What You'll Do10

  • 1Supervise all back-of-house staff during prep and service, ensuring tasks are completed to standard.
  • 2Issue write-ups for attendance or policy violations, documenting incidents per company procedure.
  • 3Conduct daily compliance checks for EHS and safety regulations, correcting any violations immediately.
  • 4Ensure food preparation follows standardized recipes and portion controls, sampling dishes before service.
  • 5Maintain kitchen cleanliness and organization, verifying sanitation against health codes.
  • 6Monitor food inventory levels, communicating shortages to management for timely restocking.
  • 7Train new kitchen employees and cross-train team members on multiple stations to build flexibility.
  • 8Enforce FIFO rotation and labeling practices, reducing waste and ensuring freshness.
  • 9Execute line checks and quality control at shift open and close, verifying temperatures and presentation.
  • 10Serve as point person in the kitchen when senior leadership is absent, resolving conflicts and escalating issues as needed.

  • 12+ years in a commercial kitchen or high-volume food service operation, with 2+ years in a supervisory or lead cook role.
  • 2High School diploma or GED required; equivalent education and experience considered.
  • 3Food Handler's certificate from the County of San Diego.
  • 4Ability to read, write, and understand English, following verbal and written instructions.
  • 5Strong basic math skills, including counting, conversions, portion calculations, and recipe adjustments.
  • 6Sound judgment and common sense to apply general instructions, with strong multitasking and prioritization.
  • 7Proficiency in leading teams and food preparation techniques.
  • 8Ability to operate food service equipment like impinger ovens and beverage dispensers, plus cash register and office equipment.
  • 9Physical capability to stand for prolonged hours, lift up to 50 pounds, and work in hot, humid, and noisy environments.
  • 10Bilingual in Spanish preferred.
  • 11Flexibility to work opening, mid-day, and closing shifts, including nights, weekends, and holidays.
