You own the execution of every dish that leaves the pass at Won't Stop Operations, a high-volume kitchen in Indianapolis. You hold the line between raw ingredients and a finished plate, maintaining 5+ years of consistency and quality. You work alongside a tight BoH team under a Kitchen Manager, with direct impact on guest experience. What You'll Do9
- 1Execute assigned tasks from the Kitchen Manager or Shift Lead with precision and speed, owning your station's output during peak service.
- 2Wash, chop, measure, and prepare ingredients following recipes and portion standards, ensuring each plate matches spec.
- 3Label, date, and store all prepared foods using FIFO rotation, minimizing waste and maintaining freshness.
- 4Follow company recipes and procedures with zero compromise on quality or safety, auditing your own work against standards.
- 5Maintain a clean, sanitized prep area using clean-as-you-go habits, completing closing and side work without reminders.
- 6Support dishwashing and line duties as needed to keep the kitchen flowing, assisting teammates during rushes.
- 7Receive and store deliveries in an organized way, checking quality and rotating stock to match prep schedules.
- 8Collaborate with the BoH team to finish prep tasks on time, coordinating shift transitions without dropping tickets.
- 9Uphold all food safety, sanitation, and labeling policies, passing health inspections with zero violations.
Requirements9
- 11+ years in a restaurant or commercial kitchen, with hands-on prep and line experience.
- 2Basic knife skills and safe operation of kitchen equipment, including grills, fryers, and ovens.
- 3Strong attention to detail, executing recipes with exact measurements and plating standards.
- 4Ability to work in a fast-paced environment, juggling multiple orders while staying calm under pressure.
- 5Team-oriented mindset with clear communication, coordinating with BoH teammates and management.
- 6Reliability and openness to feedback, adapting to shift changes and new procedures quickly.
- 7Fluency in English to read recipes, communicate with team, and follow verbal instructions.
- 8Ability to perform simple math for portioning, scaling recipes, and inventory counts.
- 9Physical stamina to stand for long shifts, lift up to 50 pounds, and handle repetitive motions.
