Executive Catering Chef owns kitchen operations at the University of Utah, directing meal production for on-campus dining across 300+ colleges. You will lead a culinary team, manage menus, and uphold ServSafe standards in a high-volume, food-forward environment. What You'll Do8
- 1Plan regular and modified menus according to established Chartwells guidelines.
- 2Train kitchen staff in food preparation, safe handling, and operation of equipment, food safety and sanitation based on company and regulatory standards.
- 3Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas.
- 4Maintain inventory of food and non-food supplies to stay within established guidelines while assuring necessary product availability.
- 5Comply with federal, state, and local health and sanitation regulations and department sanitation procedures.
- 6Drive food quality and presentation for catered events, leveraging catering trends and production techniques.
- 7Use Microsoft Office (including Excel and PowerPoint) to track budgets, inventory, and staff schedules.
- 8Lead high-volume kitchen operations, ensuring efficiency and adherence to OSHA and HACCP standards.
Requirements7
- 1A.S. degree or equivalent experience.
- 23-5 years of progressive culinary/kitchen management experience.
- 3Comprehensive knowledge of food and catering trends with focus on quality, production, sanitation, food cost controls, and presentation.
- 4Experienced with computers, including Microsoft Office (Word, Excel, PowerPoint), Outlook, E-mail, and the Internet.
- 5Extensive catering experience preferred.
- 6High volume, complex foodservice operations experience highly desirable.
- 7ServSafe certified highly desirable.
