Overview
You will own culinary operations for student dining and catering at SUNY Old Westbury, supporting a high-volume campus with 3,500+ meals daily. You will assist the Executive Chef in kitchen management, menu development, and cost control while supervising hourly associates. What You'll Do8
- 1Drive daily kitchen operations for student dining and catering, ensuring quality and timeliness.
- 2Assist the Executive Chef in planning and creating menus that align with campus dining trends.
- 3Produce and execute catering events, from small meetings to large banquets.
- 4Roll out new culinary programs in partnership with marketing and culinary teams.
- 5Control food costs and expenditures, monitoring inventory and purchasing.
- 6Supervise hourly associates, training them on food prep and safety standards.
- 7Foster strong relationships with campus clients to align dining programs with their objectives.
- 8Debug and refine recipes and presentation standards to maintain consistency.
Requirements7
- 1A.S. degree or equivalent culinary experience.
- 22+ years culinary/kitchen management experience, depending on formal degree or training.
- 31+ year high-volume, complex foodservice operations experience, highly desirable.
- 4Institutional and batch cooking experience helpful.
- 5Comprehensive knowledge of food trends, quality, production, sanitation, and food cost controls.
- 6Proficiency with computers and point-of-sale systems.
- 7ServSafe certified.
