Overview
You will own dish room operations at Hawksmoor's landmark Chicago restaurant, handling 300+ covers nightly. You will join a 12-person kitchen team led by Executive Chef, supporting prep and service. This role offers 50% pay above market, 5 days on, 2 off, and a clear path to Kitchen Porter Supervisor.
What You'll Do9
- 1Operate the dish machine and chemical dispensing systems to sanitize all utensils, equipment, and surfaces
- 2Build and break down the dish area, including bin room, floors, and walls, per opening and closing checklists
- 3Maintain kitchen equipment integrity through daily descaling, filter changes, and weekly deep cleans
- 4Safely mix and apply cleaning chemicals following OSHA and Hawksmoor safety standards
- 5Execute health and safety protocols, including proper glove use, temperature checks, and spill containment
- 6Coordinate with line cooks to prioritize dish throughput during Friday and Saturday peak hours
- 7Inspect all incoming kitchenware for chips, cracks, or residue before returning to service
- 8Support the chef team by spot-cleaning during service and resetting stations for the next shift
- 9Track and report inventory levels of soap, sanitizer, and towels to the evening supervisor
Requirements8
- 12+ years washing dishes in high-volume restaurants (200+ covers per shift)
- 2Working knowledge of commercial dish machines and chemical safety data sheets
- 3Ability to stand and walk for 8-10 hour shifts, including stairs and slick surfaces
- 4Capable of lifting 50 pounds regularly and 70 pounds occasionally
- 5Flexible schedule including weekends, holidays, and closing shifts
- 6Basic English communication for team coordination and safety instructions
- 7Valid Food Handler certificate or ability to obtain within 30 days
- 8Prior experience in steakhouse or fine dining environments preferred
