Overview

As Director of In-Room Dining at Wynn Las Vegas and Encore, you will own the strategic leadership, operational excellence, and financial performance of the entire In-Room Dining (IRD) department. You will oversee all aspects of guest room dining, from service delivery and culinary coordination to staffing, training, and quality assurance, ensuring every experience meets Forbes Five-Star standards. Working with Food & Beverage, Hotel Operations, Culinary, Stewarding, Purchasing, and Revenue Management, you will drive continuous improvement across the department. What You'll Do8

  • 1Lead all In-Room Dining operations across Wynn Las Vegas and Encore, setting departmental goals and service standards aligned with resort objectives.
  • 2Drive seamless execution of breakfast, all-day dining, overnight service, and large-scale guest orders, maintaining Forbes Five-Star compliance.
  • 3Resolve complex guest concerns and implement service recovery strategies that reinforce luxury hospitality, using guest feedback to refine personalization.
  • 4Own the departmental budget, labor costs, and forecasting, analyzing revenue trends and menu performance to maximize profitability without compromising service.
  • 5Mentor and develop management and hourly team members, fostering a culture of accountability, engagement, and continuous learning.
  • 6Ensure compliance with Nevada health regulations, food safety standards, and OSHA guidelines, keeping all certifications current.
  • 7Collaborate with Executive Chefs, Property Leadership, and resort departments to support seamless guest experiences and strategic initiatives.
  • 8Optimize inventory controls and purchasing processes to reduce waste and manage costs, partnering with Revenue Management on pricing and promotions.

Requirements10

  • 15+ years of progressive Food & Beverage leadership, including multi-outlet or luxury hotel dining operations.
  • 2Demonstrated success in budget management, labor control, and financial performance within a luxury hospitality setting.
  • 3Strong knowledge of Forbes Five-Star service standards and guest experience principles.
  • 4Proven ability to lead, motivate, and develop high-performing teams.
  • 5Exceptional verbal and written communication skills, with strong analytical and problem-solving abilities.
  • 6Proficiency with Microsoft Office Suite and hospitality management systems.
  • 7Bachelor's Degree in Hospitality Management or related field (preferred).
  • 8Experience in Forbes Five-Star or AAA Five-Diamond hotel environments (preferred).
  • 9GM or Director-level experience in high-volume or in-room dining operations (preferred).
  • 10Knowledge of POS systems and inventory management platforms (preferred).
