Overview
Own the quality and presentation of the Meat department at El Rio Grande Latin Market, a bustling Dallas grocer serving a loyal Latino customer base. You'll manage back stock, maintain display cases, and ensure every cut meets Texas state weights and measures regulations. Reporting to the Meat Supervisor, you'll work with a small team of butchers and stockers in a high-volume, 7-day operation. This role stands out for its blend of hands-on butchery and customer interaction, with bilingual (Spanish/English) skills highly preferred.
What You'll Do8
- 1Audit incoming shipments and rotate stock using FIFO to keep product fresh and safe, cutting waste within the first 90 days.
- 2Break down primal cuts into retail portions with precision, using band saws and knives to hit yield targets.
- 3Season and marinate meats per house recipes, then wrap, label, and price each package with accurate UPC codes.
- 4Rebuild display cases each morning, arranging items by cut and price point to maximize visual appeal and sales.
- 5Train new hires on knife skills and food safety protocols, reducing onboarding time by 20%.
- 6Run daily Weights and Measures checks on scales and tares, documenting results to pass state inspections.
- 7Operate the baler and forklift to manage cardboard and pallet waste, keeping the back room code-compliant.
- 8Assist customers with cut recommendations and cooking techniques, building loyalty and repeat business.
Requirements10
- 12+ years in a meat customer service role, with hands-on experience in a retail butcher shop or grocery.
- 2High school diploma or GED required; college coursework in meat science or business preferred.
- 3Must be 18 years or older and able to pass a background check for food handling.
- 4Read and interpret safety rules, maintenance instructions, and procedure manuals in English and Spanish.
- 5Write routine reports and correspondence, including daily waste logs and equipment checklists.
- 6Speak effectively before groups of customers or employees to answer questions on meat products.
- 7Apply common sense to carry out written, oral, or diagram instructions with minimal supervision.
- 8Solve problems involving concrete variables, such as adjusting cuts based on available stock.
- 9Work cooperatively in a team, willing to take on tasks that support coworkers during rush hours.
- 10Lift up to 50 pounds unassisted, stand for long shifts, and work in cold storage environments.
