Overview
You will lead the line at Dear Charles, an 85-seat village tavern inside The Study at Johns Hopkins, ensuring every plate meets the chef's standards. You'll mentor new cooks, coordinate service flow, and keep the kitchen ready for each shift. This role combines hands-on cooking with leadership, reporting directly to the Executive Chef and Restaurant General Manager. You'll work in a collaborative, guest-centered environment with a focus on traditional techniques and local ingredients.
What You'll Do9
- 1Train new line cooks on station procedures, recipes, and safety standards.
- 2Lead pre-shift meetings to align the team on menu updates and service expectations.
- 3Set up and break down your station, including deep cleaning and restocking.
- 4Coordinate with front-of-house to ensure accurate order timing and guest satisfaction.
- 5Monitor dining room feedback and correct issues promptly and courteously.
- 6Cook menu items from scratch using recipes and seasonal ingredients.
- 7Maintain food quality and consistency, tasting and adjusting as needed.
- 8Manage opening and closing duties, including inventory and temperature logs.
- 9Serve as the liaison between cooks and managers, communicating kitchen needs.
Requirements9
- 12+ years experience in a fine dining or upscale casual kitchen.
- 2High school diploma or GED.
- 3Proficiency in English; a second language is a plus.
- 4Working knowledge of cooking methods, equipment, and ingredients.
- 5Flexibility to work evenings, weekends, and holidays.
- 6Strong verbal and written communication skills.
- 7Organizational skills to manage multiple priorities during service.
- 8Ability to lift up to 50 lbs and stand for long shifts.
- 9Pre-employment drug test and background check required.
