Overview
You will own daily kitchen operations at a lively Miami tavern and grille, leading food prep, plating, and service for fine dining and large-scale catering events. You will manage a culinary team of line cooks, drive inventory control, and uphold strict food safety protocols. This role offers direct influence over menu planning and recipe development in a high-volume, hospitality-driven environment.
What You'll Do6
- 1Lead kitchen staff during service shifts, directing food prep, cooking, and plating to hit quality standards for every dish.
- 2Oversee inventory control, placing orders, rotating stock, and cutting waste through effective food management.
- 3Enforce food safety and sanitation procedures across the kitchen, ensuring compliance with health regulations.
- 4Assist with menu planning and recipe development, adapting dishes for catering and banquet service.
- 5Coach team members on kitchen performance, fostering a positive, collaborative environment.
- 6Monitor kitchen operations to ensure timely food delivery and smooth service flow.
Requirements6
- 15+ years experience in fine dining or high-volume catering, with strong food production background.
- 22+ years supervising culinary teams in fast-paced kitchens.
- 3Extensive knowledge of food safety standards, sanitizing procedures, and proper food handling.
- 4Proven expertise in kitchen management, including inventory control, cost management, and shift supervision.
- 5Strong leadership skills to motivate and manage diverse teams effectively.
- 6Experience with banquet service, catering operations, or dietary department is highly desirable.
