Overview
Dexterra Group seeks a Head Chef to lead food service operations at a Dallas workforce accommodations facility. The role involves full accountability for scaling from 500 to over 1000 daily meals while ensuring food safety quality and compliance.
What You'll Do13
- 1Full accountability for all food service operations from planning through execution
- 2Preparing and presenting high-quality rotational menus at scale
- 3Leading kitchen operation to safely and efficiently serve 500+ guests daily with rapid growth to 1000+
- 4Ensuring strict adherence to food safety quality and contractual scope requirements
- 5Enforcing compliance with Dexterra Food Safety programs including FOODSAFE and HACCP
- 6Leading, training, developing, and mentoring the entire culinary team
- 7Supervising kitchen staff productivity performance and policy compliance
- 8Managing labour food and chemical resources for efficiency and cost control
- 9Overseeing ordering inventory control and bi-weekly inventory counts
- 10Applying expertise in dietary requirements including allergies vegan vegetarian and special diets
- 11Maintaining high standards of cleanliness organization and professionalism
- 12Serving clients and guests in a personable professional and service-oriented manner
- 13Supporting Site Manager with culinary input related to planning forecasting and operational execution
Requirements11
- 1Chef or Certified Executive with culinary education and/or Chef designation authorized to work in the United States
- 2Advanced Food Safety or HACCP certification
- 3Minimum 8 years of experience in hospitality or food service industry
- 4Minimum 8 years of experience as a Chef including hotels resorts restaurants or workforce lodges
- 5Demonstrated experience operating large-volume food service environments
- 6Strong knowledge of menu costing recipe card implementation and cost controls
- 7Advanced practical and theoretical knowledge across all kitchen areas hot kitchen cold kitchen pastry bakery butchery banquets and mass-service operations
- 8Proficiency with Microsoft Excel Word Outlook and food service systems
- 9Proven ability to lead develop and retain culinary teams
- 10Leadership style demonstrating ownership accountability strong communication and professionalism
