Overview
As the Assistant Bakery Operations Manager, you will own bakery operations at our South Loop store, executing inventory, scheduling, and staffing with full accountability. You will lead a team of hourly staff, coaching them to meet Insomnia Cookies quality and service standards. You will partner with the Bakery Operations Manager to close operational gaps and step into full ownership during absences. This role is a direct pipeline to Bakery Operations Manager, with structured development and bonus potential. You will work onsite in a high-volume, fast-paced environment, earning $18.50-$21.00/hour plus benefits and free cookies.
What You'll Do9
- 1Execute all core bakery operations, including inventory rotation, scheduling support, and staffing coordination, to meet targets at our South Loop store.
- 2Maintain strict product quality, cleanliness, food safety, and guest experience standards during every shift.
- 3Support ordering and inventory accuracy to control shrink and ensure stock levels.
- 4Assist in building the schedule and managing labor execution to hit operational goals.
- 5Recruit, interview, and onboard new staff, then train them to company standards.
- 6Deliver real-time coaching and performance feedback to hold team members accountable while fostering a growth mindset.
- 7Lead bakery operations independently when the BOM is absent, ensuring continuity during staffing shortages or transitions.
- 8Identify operational gaps with the BOM and Area leadership, then implement solutions to improve efficiency and quality.
- 9Perform all bakery roles during peak periods to support the team and model operational discipline.
Requirements6
- 11+ year leadership experience in restaurant, retail, or hospitality operations.
- 2Strong operational discipline and attention to detail.
