Overview

You will own daily operations across a la carte restaurants and banquets at a 700+ member country club. You manage a team of FOH staff, oversee service standards, and drive revenue and cost controls. Reporting to the Food & Beverage Director, you collaborate with the Executive Chef and Banquet Coordinator to deliver exceptional member experiences. This role demands hands-on leadership, from hiring to performance reviews, and ensures compliance with safety and alcohol laws. You will also serve as manager-on-duty, with a flexible schedule including evenings and weekends.

What You'll Do10

  • 1Own daily operations in a la carte restaurants and banquets, ensuring standards of quality in food service and member satisfaction.
  • 2Hire, train, supervise, and discipline FOH staff, conducting orientation and ongoing training to maintain service excellence.
  • 3Implement and maintain standard operating procedures for revenue and cost control, including charge procedures, tip reports, and daily sales analysis.
  • 4Monitor labor costs by managing timecard records, minimizing overtime, and scheduling to meet weekly and seasonal staffing needs.
  • 5Ensure compliance with all legal requirements for food safety and alcohol service, including Food Safety Certification and Alcoholic Beverage Certification standards.
  • 6Conduct performance reviews for line-level FOH staff and enforce safety policies, including OSHA regulations and documented training.
  • 7Oversee dining room setup and cleanliness, table stability, lighting, and temperature, before and after meal services.
  • 8Manage purchasing and receiving to ensure proper quantity, quality, and price for all food and beverage items.
  • 9Resolve member and guest complaints, advising the Food & Beverage Director on corrective actions.
  • 10Maintain records of special events, house counts, food covers, and daily business volumes, and complete periodic china, glass, and silverware inventories.

Requirements10

  • 13+ years of hospitality management experience in a country club or upscale/fine dining restaurant.
  • 2Food Safety Certification and Alcoholic Beverage Certification required.
  • 3Proven experience with food and beverage cost controls and operating procedures.
  • 4Menu design experience, with knowledge of wine, spirits, beer, and bar operations.
  • 5Hands-on experience with point-of-sale systems.
  • 6Strong leadership and team development skills, with a track record of building and maintaining a positive team culture.
  • 7Excellent interpersonal and organizational skills, with the ability to communicate effectively across all club departments.
  • 8High attention to detail and a passion for hospitality.
  • 9Flexible schedule including evenings, weekends, and holidays.
  • 10Physical ability to stand for long periods, lift up to 50 pounds, and work in hot, humid, and noisy environments.
