Overview
As Executive Chef at Sparrow Italia in New York City, you will own all food quality, cost control, and back-of-house operations from day one. You will lead a kitchen team of 20+ across an upscale Italian concept, partnering directly with the Culinary Director to deliver exceptional guest experiences. This role demands a leader who can train, mentor, and inspire staff while maintaining pristine hygiene and safety standards. What You'll Do8
- 1Maintain constant quality control on all dishes, verifying they meet Culinary Director standards and are plated with precision.
- 2Oversee the Sous Chef daily, collaborating to elevate culinary output and resolve line issues in real time.
- 3Hire, train, and develop all back-of-house staff, focusing on menu execution, knife skills, and food safety.
- 4Conduct ongoing training sessions to close skill gaps and prepare team members for advancement.
- 5Coordinate kitchen workflow and step in to support any station during peak service or callouts.
- 6Complete all food and station prep before events, ensuring readiness for service.
- 7Track inventory and place orders for ingredients and equipment, minimizing waste and controlling COGS.
- 8Enforce strict hygiene and safety protocols, ensuring compliance with NYC health codes.
Requirements9
- 11-2 years in a management role within an upscale or lifestyle hotel or restaurant.
- 2Culinary degree preferred, high school diploma or equivalent required.
- 3Proven ability to replicate and coach precision plating to company standards.
- 4Passion for food and creating exceptional guest experiences.
- 5Gracious, friendly, and composed demeanor under pressure.
- 6Strong multitasking and attention to detail in a fast-paced kitchen.
- 7Excellent verbal and written English; bilingual Spanish a plus.
- 8Ability to work on-call, evenings, weekends, and holidays.
- 9Capable of lifting up to 50 pounds, standing for full shifts, and repetitive motion.
