What You'll Do6

  • 1Oversee daily execution of all-day menu from brunch to late-night, ensuring consistency in taste, plating, and quality.
  • 2Recruit, train, and mentor 15-20 kitchen staff, fostering a positive and disciplined culture.
  • 3Manage food and labor costs, analyze P&L, and adjust purchasing to hit margin targets.
  • 4Control inventory, place orders with vendors, and negotiate pricing to maintain profitability.
  • 5Supervise prep and line during peak rushes, monitoring speed and quality in real-time.
  • 6Enforce health department regulations, sanitation protocols, and kitchen organization daily.

Requirements6

  • 16+ years as an Executive Chef or Head Chef in a high-volume, scratch-kitchen environment.
  • 2Deep knowledge of French bistro cuisine and modern prep techniques.
  • 3Proven ability to build and retain strong kitchen teams.
  • 4Certified Texas Food Manager certification.
  • 5Experience with menu development and costing.
  • 6Strong financial acumen with food and labor cost management.
